Recipe

I made the cookies from Pacific Chai. When I tried to make the batter, it came out too fine and crumbly. It didn't look normal, so I made some alterations. The results are great!! Buttery, soft and slightly chewy Chai cookies. Yum!! Chai Butter Cookies 1 c unsalted butter at room temp 1/2 c chai powder 2/3 c sugar 1 large egg 1 3/4 c all-purpose flour 1 1/2 tsp baking powder 1 tsp salt Whip butter until light and fluffy. Add chai powder and sugar. Whip again until light and fluffy. Add one egg and blend well. In another small bowl, mix flour, baking powder and salt. Pour flour mixture into the chai batter and mix slowly. Cover batter and put in refrigerator to chill. Set oven to 400 degrees. Take the chilled batter out of the refrigerator. Roll the dough into 1 inch balls. Roll in granulated sugar. Put on greased cookie sheet 4 inches apart. Take a fork or a cookie press and flatten the cookie dough to 1/2 inch thickness. Bake for 10 to 12 minutes. Makes about 18 or more cookies.
