Hot Daisies or Hot Mesas
Biscuit:
4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, room tempurature
1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
1 dried bell peppers
1 teaspoon dry diced onion
3 cup shredded Cheddar cheese
1 1/2 cup buttermilk
Filling:
1 packet taco seasoning
1 lb. ground beef or diced chicken
1/2 cup water
Directions:
Brown the meat and drain. Add one packet taco seasonings and water. Heat until the liquid is almost gone. Set aside. In a bowl, combine the flour, baking powder, baking soda and salt; cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk and 1 cup shredded cheese; knead dough gently. Roll out to 1/4-inch thickness. Cut with a 2-1/2-inch, biscuit cutter and place on a lightly greased baking sheet. Top each biscuit with taco seasoned meat. Sprinkle with cheese. Top with a second layer of biscuit and press down to make "sandwiches". Bake at 450 degrees for 10 - 15 minutes or until golden brown. Top with extra cheese to melt. Depending on the thickness of the batter rolled out, it makes between 18 to 36 pieces.
